The Taste of Quality is Freshness...
Extra virgin olive oil should be judged in the same manner as any fresh fruit product. Only when the best olives are handpicked and the greatest care is taken to capture the natural goodness of healthy olives can high-quality extra virgin olive oil be produced. Because these olives are not over-processed, but preserves its natural peppery finish and green aroma, the extracted oil maintains its capacity to absorb flavors during cooking and directly improve the way your food tastes. For centuries the Spanish have used high-quality extra virgin olive oil in this way?as the critical ingredient to great-tasting food.
What Does Extra Virgin Mean?
"Extra virgin" is a chemical term that does not assure quality or taste. Any olive oil meeting a chemical requirement of less than 1% acidity can be labeled "extra virgin". Most olive oils today are extra virgin in name only, easily meeting this requirement through food science chemistry.
Using only the most cared for olives, they are able to naturally produce a delicious olive oil with less than half the acidity of regular extra virgin. In the pursuit of premium quality and taste. The olives are hand picked and estate-grown olives and then pressed within 24 hours of harvest to produce Premium Select Extra Virgin Olive Oil.

 Toad Hollow WineryArriving This Week!!
Toad Hollow Vineyards began operation in 1994, with lots of 1993 Russian River Valley Chardonnay. Their Chardonnay is 100% Stainless Steel fermented, using no oak at all. Since then they have added additional wines, a Russian River Merlot (Richard McDowell Vineyard), a Russian River Pinot Noir (Goldies Vines) a Zinfandel from Paso Robles and a Rose of Pinot Noir from Carneros. In 1995 they started to import wines made by our French friends at Sieur D'Arques and now have two sparklings and three still wines in the portfolio. The mission is to produce quality wines that are interesting at a reasonable price. the labels are whimsical, supporting another element of the philosophy - belief in drinking wine should be FUN!!!
2006 Toad Hollow Chardonnay
Mendocino County
Nine months in all STAINLESS STEEL TANKS.
NO WOOD!
100% malolactic treatment and was left on the "lees" for (8)eight months. This was done to maintain the acidity and to give the wine the middle mouth complexity desired.
The vineyards used are 90% Mendocino County and 9% Sonoma County.
The residual sugar is less than 0.2% (DRY).
Alcohol is 13.76%...but due to the balance of Fruit VS. Acid, you don't taste the "heat"
42,000 cases produced in the same fashion as the '93 vintage (our first) of which we produced 3000 cases. And we feel that the wine is every bit as good as our best vintage to date ('94).
We are still drinking our 2003 vintage Chardonnay. The wines are long lived, especially at the price point.

Winemaker Profile: TODD WILLIAMS ~ By Charles Neave
As you might imagine there is a bit of whimsy connected with Toad Hollow Vineyards in Sonoma County. But when it comes to making the wine, they are as serious as can be. No less an authority than the New York Times' Frank Prial praised one of their wines recently, a light sparkling wine called "Risque," one of the winery's newer efforts.
Winemaker Todd Williams is quick to praise other winemakers that he works with when he makes Toad Hollow wines, but he is still the driving force behind each of the 90,000 cases that the winery produces annually. "We started small and had planned to stay that way, but somehow the business has just gone crazy," he says, with an amused shake of his head.
"Our Chardonnay is the engine that drives the business. It's all stainless steel fermented and aged in stainless as well," Williams says of his award-winning wine. "It's an alternative to the heavy, buttery, oaky Chardonnays that are out there. It's a nice, crisp Chard that goes great with food."
"We also make a Russian River Pinot Noir and a Merlot off our 103 acre home ranch. But all the Chardonnay grapes come from five growers in Mendocino County." They also make a dry rose from Carneros grapes, and a Zinfandel called "Cacophony" from Paso Robles. "The word means 'raucous or discordant' which pretty much describes me," he says with a hearty laugh.
"I have two buzzword-phrases when it comes to our wines. The first is 'World class wines at affordable prices'. When it comes to Chardonnay I say 'Taste the fruit, not the fluff.' That about sums up our philosophy."
Toad Hall Vineyards and Todd Williams are now into their eleventh vintage and the once small winery continues to grow, with eleven different wines bearing their label. And, from the looks of it, Williams is still having fun, which is what he set out to do from the very beginning.

Clos Mimi' Petite Rousse
History of Clos Mimi
Established in 1996 by Tim and Mimi Spear, Clos Mimi is a "tres petite" winery located in Santa Maria, California. Clos Mimi is French for "Mimi's enclosed vineyard" expressing Tim's timeless endearment to his children's mother, his wife, his business partner, his best friend and his soul mate. Inspired by the greatest "monocepage" wines of Burgundy, Cote Rotie and Hermitage, Clos Mimi is committed to vineyard designated, one hundred percent Syrah farmed by small family growers in Paso Robles and Santa Ynez. Tim is the "vigneron" for Clos Mimi. Thanks to his traditional convictions from a previous lifetime, Tim is "tres religieux" in his pursuit of natural winegrowing. In 1988 Tim had the good fortune of interning alongside a young Jean-Louis Chave in California. Three years later while spending an entire day hiking the steep vineyards of Hermitage in Jean-Louis' royal company and tasting the unblended and highly spiritual 1990 Chave Hermitage from "barrique," Tim was smitten by Syrah.
The label for Clos Mimi symbolizes everlasting love and commitment. The mark itself intimates a spiritual connection with Burgundy. The "fleur de lys" heralds the Spear Family Coat of Arms described as "argent, a thistle with three heads, stalked and leaved vert, flowered gules." The thistle is the symbol of a noble but humble heart whose honor will be defended with the sword. The color argent (white or silver) denotes peace and sincerity. The color black was borrowed from Coco Chanel (not medieval England) known for her timeless design. According to Chinese "feng shui" the color black represents career and water. The color black is believed to be powerful, thus absorbing other colors. In fact, Pierre-Auguste Renoir called black "the Queen of colors" once upon a time in Paris.
Petite Rousse Syrah
In 2001 a "deuxieme vin" affectionately called Petite Rousse was introduced. This blended 100% Paso Robles Syrah is born from grapes contracted by the acre exclusively. Winemaking for Petite Rousse is based on Tim's experience working at Chateau Lynch-Bages and eleven and a half deeply enriching months in Bordeaux. Ten years after living in Pauillac the tradition of producing a second label "a la" Clos du Marquis and Pavillon Rouge proved to be very influential on Tim. Dedicated "to Margot and merry daughters of centuries past," Petite Rousse draws its romantic inspiration from mid-to-late nineteenth century Paris and the works of Pierre-Auguste Renoir. Sometime between the World's Fair in 1855 and "La Boheme's" first performance in 1896 Mimi and Tim fell in love in a previous but not insignificant lifetime.

Lingenfelder "Bird Label" Reisling Great Quality At A Great Price!
As Well As
A Few Other Great Wines For The Holidays

Lingenfelder 2005 Estate Bird-Label Riesling
From Pfalz, Germany. The classic. Riesling in an easy to drink, easy to enjoy, off-dry style is sweeping the world, and our little Bird has been at the forefront of this movement. All of this new found celebrity has not gone to his head however, and he still enjoys a good game of Keep-the-grape-away-from-the-worm when he is back home at the vineyard. With this wine we have attempted to capture the essence of the vineyard through clear, distinct varietals character.
Georges Duboeuf 2005 Moulin A Vent
From Moulin Au Vent, Beaujolais, Burgundy, France A concentrated behemoth, the red cherry, oak, and blackberry-scented 2005 Moulin-a-Vent is medium to full-bodied, suave, and silky-textured. Chocolate, licorice, blackberries, black cherries, and roses are found in this structured offering's super-expressive character. Projected maturity: 2008-2015.
Martin Ray 2005 Chardonnay
From the Russian River Valley, Sonoma California. Made from a blend of grapes grown in Sonoma and the Russian River Valley, this rich, long, full-bodied Chardonnay's slightly smoky, buttery, honeyed style is very Burgundian. The name Mariage (spelled correctly) comes from a Martin Ray tradition of blending Chardonnay grapes from different micro-climates. This impressive, pure wine's orange-tangerine aromas emerge after the wine has sat in the glass for ten minutes.
Chateau Fontaine 2006 Gewurztraminer
From Leelanau Peninsula, Michigan. The 2006 Gewurztraminer is off dry style. The aromatics of the 2006 Gewurztraminer are richly aromatic with hints of clove, cinnamon and flowers. With layered flavors of apple, pear and apricot. Its character includes a bit of spice in the nose and a silky mouth feel. This wine is fabulous for autumn, especially with heavier meals like stews and roasts.
